Instant Pot Orange Chicken

Ingredients

 
 
  • 1 LB chicken breast cut into bite size pieces
  • 2 TBSP tapioca flour
  • Salt + pepper
  • 1 TBSP Avocado oil
  • 1-2 TSP Sesame oil
  • 2 TSP minced Garlic
  • 1 TSP minced Ginger
  • 3/4 CUP Fresh orange juice + 1 tbsp orange zest
  • 3 TBSP coconut aminos (soy or tamari work, too)
  • 2 TBSP Just Date Syrup
  • 1 TSP chili paste
  • 1/2 CUP chicken bone broth or water 
  • Coat your chicken with tapioca flour salt + pepper
  • Set instant pot to sauté function
  • Add avocado oil, ginger, and garlic and sauté for a minute
  • Add in chicken and cook for 3-4 minutes
  • Add in just date syrup, orange juice, coconut aminos, sesame oil, chicken bone broth, and mix
  • Close instant pot and set to high pressure for 5 minutes
  • Once done let pressure release on its on (let sit 10-15 minutes) then turn off and open
