Magic Bars // GF, DF, refined sugar free

Salty buttery crust meets a rich and chocolatey topping 🤝 These Magic Bars are a classic fave made refined sugar free thanks to Dana @baydish

Ingredients

Crust Ingredients:
1 cup almond flour
1 cup flour or gluten free flour blend
⅓ cup butter, melted
⅓ cup @enjoyjustdate date syrup
1 tsp vanilla extract
1 tsp salt

Layers ingredients:
1 can coconut milk
½ cup @enjoyjustdate date sugar
Pinch of salt
1 cup @enjoyjustdate chocolate chips
1 cup shredded coconut
½ cup chopped pecans

Preheat the oven to 350 degrees. Line an 8x8 baking pan with parchment paper.

In a large bowl, add all crust ingredients and mix until combined. Press into the pan in an even layer (as close as you can get). Bake for 15 minutes, until edges are just slightly golden brown.

While the crust is baking, whisk together the coconut milk, date sugar, and pinch of salt in a saucepan over medium heat to make sweetened condensed milk. When the mixture starts to bubble reduce to low heat and simmer for 40 minutes, whisking regularly.

Remove the crust from the oven and sprinkle on the chocolate chips, shredded coconut, and chopped pecans. Top with sweetened condensed milk and bake for 25 minutes. Remove from oven and allow to cool completely. Refrigerate for at least two hours before cutting. Enjoy!
