Peach and Almond Ricotta Toast

Creamy almond ricotta with juicy peaches is a magical duo, especially when topping it off with a drizzle of Just date syrup! The caramel-y sweetness makes juicy peaches even more delicious. A quick and delicious breakfast or snack, this toast is loaded with potassium, magnesium, antioxidants, and lots of flavor. Recipe by Teo Draeger 

Ingredients

Almond Milk Ricotta (store bought works as well)

  • 2 cups blanched slivered almonds 
  • ¾ cup + 2 tablespoons water

  • 3 tablespoons lemon juice

  • 2 teaspoons nutritional yeast

  • ¼ teaspoon sea salt

Other Ingredients

  • 2 ripe peaches
  • 2 slices of preferred bread, toasted
  • 2 Tbsp Just Date Syrup
  1. Place your bread in the oven or toaster to get it toasted, and slice the peaches
  2. To make the almond milk ricotta, combine all the ingredients in a high-powered blender and blend until smooth and creamy, pausing/scraping down the sides as needed. Store leftovers in an airtight container in the fridge. 
  3. Slather ricotta onto your toast, cover with sliced fresh peaches, and finish with a drizzle of Just Date Syrup and an optional pinch of salt
